Peanut Butter Protein Bites

Stress & quarantine: the two main ingredients in this completely improvised recipe.

I started with the intention of making a rice krispie treat bastardization with oats and peanut butter in lieu of cereal and marshmallow. Instead, these were born out of restless energy and the random combination of dry goods I had on hand. The trick is getting a combination that will hold its shape well, so feel free to experiment with different binding agents like honey or maple syrup.

Makes about 15 servings.

Approx macros per bite: 102 calories, 5g protein, 7g carbs, 6g fat

ingredients:

  • 60g old fashioned oats

  • 60g protein powder (my preference is this one)

  • 100g super crunchy peanut butter

  • 1 & 2/3 tbsp coconut oil

  • 40g fig preserves

  • 15g pistachio bits

  • 15g unsweetened coconut flakes

  • 1 tbsp golden flaxseed meal

assembly:

  1. Weigh out the peanut butter into a microwave safe bowl. Microwave until mostly melted, about 45 seconds.

  2. Add coconut oil and preserves; stir until it has completely melted into the peanut butter.

  3. Stir in oats, pistachio, and coconut until evenly distributed through the whole mixture.

  4. Mix in protein powder and flaxseed and evenly coat.

  5. Separate into 20g portions and roll into spheres. Optional step: Prior to forming the bites, spread mixture out flat in a pan and chill in the freezer for at least 2o minutes. I found chilling it gave me a cleaner roll.

  6. Freeze overnight. For a cold treat, store in the freezer. For a doughier bite, keep refrigerated.
