I eat protein oats almost every single day (learn how to make them in my protein guide, found here). They’re the perfect breakfast: protein-packed, voluminous, and can be customized to taste. So when I saw a recipe for baked oatmeal, I knew I had to try and bake my proats. I envisioned something similar to a cobbler, but ended up with a breakfast bar. Either way, I’m glad I now have this to-go option in my arsenal. Now if only I had someplace to go…

Makes 16 servings. Approximate macros per serving : 9g protein, 11.3g carbs, 3.4g fat, 113 calories

Ingredients:

  • 125g oats

  • 25g granola (recipe coming soon)

  • 275g egg whites

  • 2 cups unsweetened vanilla almond milk

  • 150g protein powder

  • 105g white chocolate chips (I definitely used a heavy hand)

Assembly:

  1. Preheat oven to 375°F

  2. Whisk liquid ingredients together.

  3. Mix in protein powder and oats.

  4. Distribute chocolate chips and granola, or your own custom toppings.

  5. Pour evenly into a 3qt baking dish.

  6. Bake for approximate 30 minutes, or until set.
